Yellow carrots are known to have round shoulders and a blunt non-tapered tip. They have a firm and crunchy texture and a mildly sweet flavor without the earthiness of other color carrots. Yellow carrots taste great when roasted and can be used in a stew, soup and broths. Yellow carrots contain high levels of the carotenoid lutein, which is similar to beta-carotene and is absorbed as Vitamin A in the body. Yellow carrots pair well with other root vegetables like turnips, beets and radishes.
